A night in Chinatown

The Dusit Resort in Pattaya got my attention when I spotted
the Empress Chinese Restaurant on the eighth floor. These days I find many
Chinese restaurants in the Eastern Seaboard, but not many carry the tradition of
Chinese food which I found in the Empress Restaurant.
As my friend I walked in the Restaurant we were greeted by a beautiful, very
charming hostess wearing a traditional Chinese costume.
The restaurant has seating for around 80 persons, as well as some VIP rooms if
needed. The view from the restaurant is outstanding, the most panoramic view of
Pattaya Bay, and if you go before sundown its a very romantic place to be.
The tables are set up in typical Chinese fashion, and along
with chop-sticks and the silverware accessories, give the place a distinguished
touch. As we read the menu we had over 83 choices to select from, and for the
Hors D’ Oeuvres we choose the Empress Spring Rolls, Shredded Jelly Fish with
Chili Sauce and Steamed Chicken with Chinese Wine. All the dishes were served in
Chinese silverware and were excellent (I must say the Chinese chef recommended
the appetizers and especially the spring rolls were excellent).
For the main course we chose Sweet and Sour Prawns, Steamed Garoupa Cantonese
Style, Stir Fried Chicken with Chillies, Szechuan Style and Fried Egg Noodles
topped with Shredded Chicken and Bamboo Shoots. One of my favored dishes is the
Sweet and Sour Prawns because you find this dish in many restaurants, yet how
many times are you disappointed with the taste, because many restaurants choose
“easy” ingredients, for example ‘Ketchup’ which in my own opinion should not be
found in this dish. For me the Sweet and Sour Prawns at the ‘Empress’ shows how
good the Chinese chef is, and he is good.
For the desserts, I enjoyed the tastes of the Stuffed Chinese
Pancake, Fried Taro Custard with Gingo Nuts, and why not just have a Fresh Fruit
Platter? Overall the food was excellent and fresh which for my opinion is very
important.
You may also find different dishes, like Shark’s Fin Soup with Shredded Chicken,
Shark’s Fin Soup in Bamboo Pith, Braised Abalone with Black Mushrooms or Braised
Abalone with Sea Slugs in Brown Sauce, but remember, these dishes are more
expensive. Another welcome choice would be the Dim Sum which is served only for
lunch. As for choosing a beverage to follow very well with Chinese Food, beer or
Chinese tea are best.

Recipe
“Take the ribbes of a boore while thai (they) be
fresshe and parboyle hom, and rost hom, and then chop hom and cast hom
in the brothe of beef, and allay hit (delute) with wyne, and put in
therto clowes, maces, pynes (pine nuts), raisyns of corance, powdor of
pepur, onyons mynced gret (coarsely minced), and draw up a liour (make a
mixture) of chippes of bread and put therto, and saunders (sandalwood)
and saffron, ande medelet (mix) with pouder of canel (cinnamon), and
cast therto; then take braune lechet (pieces) of twoe ynches length and
cast into the same pot, and dresse hit up the t’one with t’other: and
serve hit forthe.”
