Quick breakfasts for kids


If your mornings are anything like our school mornings, the first hurdle is to present nourishing breakfasts in under five minutes, and preferably items that can be held in the hand, when running to the car, with breakfast then completed while sitting on the back seat. Sound familiar?

Cooking Method

Hard boil the eggs by placing in cold water, bringing to the boil, then remove from heat, leaving the eggs to continue cooking for 10 minutes then remove from the water.

Toast eight English-muffin halves and place on a cookie sheet.

Drizzle each with olive oil, then layer on tomato slices, hard-boiled egg slices (one or two egg slices on each), and a little grated mozzarella. Sprinkle with oregano and salt. You can also sprinkle ground black pepper, provided that your children like it.

Now broil for five minutes or until the cheese melts. Alternatively pop in the microwave for around one minute at 600 watts.
