Avocado Fajitas

Fajitas make for a fun dish. This one is not difficult to make and will have your guests wanting more. If you want a more “Mexican” flavor, you can add a jalapeno pepper.

Cooking method

Cut half the avocado into 1 cm cubes. Place in a bowl and pour orange juice over the avocado cubes. Slice remaining avocado; reserve.

Cut pork in strips about 1 cm by 2 cm.

Make a paste with the garlic, paprika, seasoned salt and pepper. Rub paste all over pork strips.

Heat oil in a large skillet over medium-high heat. Add pork and stir fry for two minutes, stirring frequently.

Add half of the diced onion, cook and stir for two minutes.

Add half of the sliced tomatoes and cook for one more minute or until the pork is cooked through and the tomatoes are warm.

Gently stir in the diced avocado and juice.

Serve the fajitas with flour tortillas and garnish with the remaining onions, tomatoes and sliced avocado.

Pork tenderloin 500 gm
Garlic, crushed 2 cloves
Paprika 1 tspn

Pepper ground black 1 tspn
Canola oil 1 tbspn
Small red onion, peeled and diced 1
Cherry tomatoes, sliced in half 2 cups
Flour tortillas, warmed 8
