Long stay guest honored at Diana Garden Resort

The Diana Garden Resort, led by Phakkaphonkrit Phureewattana, held a special celebration to show their love and appreciation to John Mallpas who marked the 30th anniversary of his residency at the resort.

Vitanart Vathanakul, Executive Director of the Royal Cliff Hotels Group, accepted a challenge from Nuttanai Anuntarumporn, Managing Director of Interlink Communication, and Michelle Behrmann to participate in the Ice Bucket Challenge. Vitanart personally donated 150,000 baht, which was matched by the Royal Cliff Hotels Group, making a grand total of 300,000 baht, which will be donated to the ALS association, the Pattaya Orphanage and the Pattaya Redemptorist School for the Blind.

Fit & Firm Buddy Search at Tree@Sea Ban Ampur

Tree@Sea Restaurant Ban Amphur recently hosted the San Mig Light Fit & Firm Buddy Search 2014 recently. The fun filled event was attended by local residents and regular customers. Amongst the special guests were Nattapon Trijakajon (3rd right), marketing manager of San Miguel Thailand, Sirilak Na Songkla, (3rd left) PR director of Siam Sport Syndicate, the winner for this event Jakkaporn ‘Tum’ Kempradap (left) and Thai celebrities Thongpoom Siripat (2nd left) and Kanyapat Thananchai (2nd right).

Helle Rantsen, president of the Pattaya International Ladies Club (PILC), and her members attended a unique meeting at the Ravindra Beach Resort & Spa recently. Forty two lovely ladies of the club were privileged to observe and learn the fine art of carving and decorating fruit, courtesy of the Food and Beverage Department, and to attend a cooking class demonstration by Chef Pratraphone Rareongjai (Chef Ton), who even discreetly revealed some of his secrets recipes.

Philippine Chicken Adobo

This is a Filipino dish which is not spicy, but the 10 garlic cloves will come through. Best served with steamed white rice, this item has its origin in Spain, where it was a chicken stew. Requiring a marinade, remember to leave enough time for the flavor to permeate the meat. I recommend putting the meat in a Ziploc plastic bag with the marinade for two hours in the refrigerator, turning once.

Cooking Method

Cut chicken into 5 cm cubes. Prepare the marinade of garlic, pepper, salt and vinegar and bay leaves and pour over chicken (see introduction).

In a large saucepan pour meat cubes and marinade and simmer over a moderate heat till all the liquid evaporates.

Now add the stock, simmering on low heat and till all the liquid has evaporated and the chicken is slightly tender.

Pour in the coconut milk and cook over a moderate heat until the coconut milk is completely absorbed by the meat. At this stage add oil and fry until meat is deep brown with a slightly crisp surface.

Serve with steamed jasmine rice.

Chicken 1 kg
White vinegar 150 ml
Garlic crushed 10 cloves
Black peppercorns crushed 1 tspn
Bay leaves 2
Salt 1 tspn
Stock (beef or chicken) ½ cup
Thick coconut milk ½ cup
Vegetable oil 3 tbspns
