It used to be, many years ago, that Friday was fish and chips night, so for all the home cooks, here is the perfect chip recipe. Chips are a European staple; however, there are many different styles of chip, ranging from the commercialized “French” fries to the British chunky chip. Adding to the mystique is the fact that the Belgians have laid claim to inventing the humble chip! And the history books show that the Belgians laid claim first!

Ingredients Serves one to an army

Potatoes (many types including Maine, King Edward, Maris Piper, Cara, Wilja, Saxon, Maris Peer, Desiree, Sante, Pentland Dell, Fianna, and Idaho, but most potatoes will do). 1 kg will feed 4 people.

Polyunsaturated cooking oil to half fill your deep-fryer.

Cooking Method

Cut the potatoes into chips (your selection of thin or hefty) and soak in cold water to remove excessive starch. Drain and pat completely dry with a clean tea towel - essential for a crisp finish.

Blanche the chips frying at 170 C for 4-6 minutes and lift out just as they start to color.

Raise the heat to 190C and then plunge the chips back into the oil for a further 2-3 minutes until golden brown.

Drain the chips on absorbent paper and season lightly with salt.

The 2015 King’s Cup Pattaya City Marathon will take place on the morning of Sunday, July 19, with the runners setting off from a start point outside the Central Festival Pattaya Beach shopping mall. The event will incorporate a full marathon of 42.195km, a half marathon (21.1km), quarter marathon (10.55km), a wheelchair quarter marathon (10.55km) and a micro marathon (fun run) of 3km. Kai Yat Sai (Stuffed Thai Omelet)

This is a very common Thai dish, available at the side of the road. It is, however, a very tasty and satisfying meal in itself.

Cooking Method

Heat half of the oil in a wok high heat and stir-fry the meat for 2 minutes. Add the tomatoes, green peas, onion, sugar, fish sauce, soy sauce and pepper. Stir-fry another 2 to 3 minutes until cooked then set aside.

Heat a small skillet or omelet pan and add a drop of the remaining oil. Pour in enough egg to thinly cover the base. Brown the omelet lightly on both sides, being careful to turn the omelet over gently halfway through cooking.

To stuff the omelet, place 1 to 2 spoonfuls of the meat mixture in the center, fold two opposite sides toward the center and then fold in the remaining sides so that the omelet forms a square. Place on a serving plate and repeat until all the egg and pork mixture is used up.

Durian Ice Cream?

It is Durian time again. At the side of the roads are pick-ups with the spiky fruit that you can smell from 20 meters away, and the signs are brought out for the hotel foyers which state no Durian to be brought into the hotel. This is a fruit that you either love or hate. When first introduced to it I was told it tastes like heaven but smells like hell. It is still the best description, in my opinion.

However, there are ways to use Durian in the kitchen, with recipes for cakes and flans and finally ice creams.

This durian ice cream is super easy to make. It ends up like a harder version of commercial frozen yogurt. Just leave it in room temperature for about 15 minutes to soften slightly before serving.

Cooking Method

1. Puree all the above and pour into a freezer proof container with a lid or wrap with cling wrap.

2. Freeze overnight. To serve, leave it in room temperature for 15min to soften slightly before scooping.

Ingredients Serves 6-8
Durian flesh good quality 550g
Yogurt (store bought or homemade) 200g
Milk cold 2 tbspns
Sugar granulated 1 tbspn
